Adalu: Beans and corn porridge

AdaluEvery rainy season is also a season of corn. It is enjoyed by both the rich and the poor. Corn could be taken as meal or as snack. Corn is enjoyed in several ways, one of which is cooking it with beans which gives Adalu (beans porridge).

Adalu is common among Yoruba people. Why not cookAdalu this weekend? You will come out with a delicious meal if you use freshly plucked corn. Chewing corn when fresh can, expecially, be enjoyable.

Ingredients forAdalu

Beans (black eyed/brown beans)

Corn(either raw from the cob or canned)

Onion bulb

Palm oil

Pepper (fresh or ground)

Salt

How to prepare Adalu

Set a large pot on medium heat and add water, cover and bring to a boil. Pour already picked and washed beans, sliced onions and leave to cook.

Remove raw corn from the cob, rinse and set aside.

After about 10 minutes, add the corn grains and cover for it to cook together

Uncover the pot to check whether the corn and beans have cooked very well. Then add salt, palm oil, fresh or dry ground pepper and  crayfish (optional)

Cover and leave to simmer for about 10 minutes. Your adalu is ready!

Note: Pressure pot is an advantage, as it makes the Adalu cook faster.
